I remeber the early days in greece before tills and formal menus where the waiter used to count the bottles and plates at the end of the evening and a price would be agreed from that alone!

I'm not sure that the cover charges will go up en-masse Martin. Obviously some tavernas will try their luck and push up the cover charges but given the current climate i think that the bulk of tavernas will try and absorb the increases.
Those days you remember..............just a distant memory now! I always remember a taverna i was a regular in on my first visit to Skopelos. I used to ask for a beer and Apostolis the owner always replied " you know where the fridge is!" He always knew exactly how many i had drunk!

ROFL - he was probably in a better position than you to work out your consumption?

But joking apart, those were the days when there was a lot of trust and honesty. It is still there at some places, but not all tourists are as honest as us ...........
